Sesame Soba Noodle Salad

This makes for an amazing lunch! It keeps well for a few days in the fridge. If you’re looking for ways to mix it up, you can serve it with store bought (or homemade!) dumplings for a meal you’ll look forward to eating.

¼ english cucumber, cut in half and sliced thin
½ red bell pepper, diced
½ yellow zucchini, diced
⅓ package soba noodles (they typically come wrapped in 3 bunches)
1 TBSP sesame seeds
¼ cup toasted sesame oil
2 TBSP rice vinegar
5-10 basil leaves, shredded
Sea Salt

  1. Cook soba noodles according to direction, rinse in cold water

  2. Mix rest of ingredients in a bowl and add noodles. 

  3. Mix thoroughly and chill until served.
